Wheat Pancakes

1 1/2 cups wheat flour (hard white)
1 tablespoon baking powder
¼ teaspoon salt
¼ cup vegetable oil
2 eggs
1 ½ cups milk

Beat egg whites until stiff. Mix all other ingredients. Gently fold in egg whites. Cook at 350-400˚F on griddle or non-stick pan. A waffle iron is good too. (Grease or spray beforehand.)
