(Makes enough for 9x13 or two small pans or pie tins)
-Crust:
1 1/2 pkgs graham crackers
4 Tbsp sugar
1 cube melted butter
-Filling:
1 pkg (8oz) cream cheese (softened)
1 can evaporated milk (chilled)
1 cup powdered sugar
1 small pkg lemon Jell-O
1 cup boiling water
Dissolve Jell-O in 1 cup boiling water, set aside to cool. Crush grahams, add sugar, mix in melted butter and press into pan. Cream together cheese and powdered sugar and combine with cooled Jell-O. Whip canned milk and fold into cream cheese mixture. Pour into pan and chill.
