Millanesa de Pollo (Karl's favorite)

Karla Ward

Chicken breasts (or tenders if you are feeling lazy or in a hurry)
Bread crumbs
Garlic Salt
Pepper
Herbs
Melted butter
Lemon juice

Pound the chicken until it's really thin. Combine the bread crumbs with all of your seasonings. (If you want it to be really good, you can also crush up some saltine crackers and add those to the bread crumbs too, I'm just usually too lazy). Dip the chicken into the melted butter and then into the bread crumb mixture. Heat some oil in a pan and cook the chicken for a few minutes on each side until it's done. Watch it; it isn't very good if it's cooked too long. Before turning, sprinkle some lemon juice on the chicken. Karl used to eat this on his mission all the time. It's a family favorite for us.
