Chicken Capri

½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground pepper
4 boneless, skinless chicken breast halves
½ teaspoon garlic powder
2 tablespoons extra virgin olive oil
8 sun dried tomatoes
4 slices reduced-fat mozzarella cheese
Rub chicken with oregano, salt pepper, and garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side. Place the chicken breasts, side by side, in a large baking dish and allow to cool. Preheat the oven to 350˚F.
Spoon 2 sun dried tomatoes over each piece of chicken. Place mozzarella over tomatoes. Bake for 20 minutes.
