Onion bread

Super Scrumptious Onion Bread

1 package yeast (about 2 1/2 teaspoons)
1/4 cup warm water
1 small container small curd cottage cheese
1 tablespoon butter or oil
1 teaspoon salt
1/4 teaspoon baking soda
1 egg
2 tablespoons sugar
1 tablespoon minced onion
2 1/4 - 2 1/2 cups flour
1 tablespoon softened butter
onion salt (optional)

Combine water and yeast in KitchenAid and set aside. Melt butter in a small saucepan and add container of cottage cheese. Heat until warm but not too hot to kill the yeast. Add cottage cheese mixture to yeast and combine. Add salt, soda, egg, sugar and minced onion, stir to combined. Add flour and knead with dough hook for a few minutes. Place in greased bowl and turn to coat. Cover and let rise until doubled. Roll out on floured surface and roll up. Seal edges with the heal of your hands, place in greased loaf pan. Cover and let rise again until about doubled. Bake in preheated 350 degree oven for 40-50 minutes. When done, brush with softened butter and sprinkle with onion salt. (I like it this way, but my children don't, so I leave the onion salt off for them). Enjoy!

Note: This recipe also works really well in a bread machine. Just add everything but the butter and onion salt at the end. I always use the full 2 1/2 cups of flour in the machine. Either use the dough setting or go ahead and bake it in there. It works great.
